1. BHAJIYA (BHA-GEE-YHA) (Vegetable Fritters) These are commonly known as PAKORAS - deep fried chick pea flour batter mixed with vegetables.

Method Mix all the batter spices, flour and oil with water into a thin runny batter. Don't make it too runny if you are going to use silverbeet or onions as these give off water and the batter will not stay together when cooked. Then:- a) if using silverbeet and/or onions - Finely chop the silverbeet and/or onions. Mix into the batter thoroughly. Drop bite size amounts into medium hot oil and cook till brown. Check the insides and if not cooked make the pieces smaller or cook for longer. Don't leave them in for too long else they will be soaked with oil. b) if using sliced potatoes or fish Dip the pieces into the dough and deep fry in medium hot oil. Serve hot with any chutney or raita. Bhajiyas also go well with beer and salsa dips.
