10. POTATO AND PEA CURRY (Serves 4) Ingredients
Method Dice the potatoes and tomato and slice the onion. In a large pot heat the oil and the black mustard seeds. Keep covered and fry until the seeds pop (careful not to burn the seeds). Add onions and sauté until tender. Add all the spices and fry for a few minutes. Add the potatoes and fry for a few minutes. Cover with water and simmer gently for approximately 15 minutes or when the potatoes are half cooked. Add the frozen peas or mixed vegetables. Cook a further 10 minutes or until the potatoes are fully cooked. Put in the diced tomatoes and leave for five minutes. Potato and Pea Curry can be served with roti or rice.
