If the longpig is a male, castration
is the first step as the reduction of the male hormone is necessary
to maximize the quality of the meat.
This procedure is actually quite simple.
Firmly secure the longpig because he's not going to like this
too much and with one hand grasp the penis and extend away and
upward from the body. With the testicles layed out and exposed,
they can be easily severed by a sharp butchers knife. Next a hot
cauterizing iron is used to seal the scrotal sac.
