Rob's Bean Burritos for 6
- Two boxes Fantastic Foods dried refried beans (also available in bulk at health food stores)
- Two 10-packs of large tortillas
- Three large onions
- Hot peppers
- 1 ½ lbs pepper jack cheese, cubed
- One 24oz. jar

- Slice and saute onions and peppers in olive oil.
Add proper amount of hot water to dried beans, and cover for 5 minutes. Warm tortillas one by one on a grill (Matt had a heavy duty camping grill which worked really well). While tortilla is warming, schmear with bean mixture, add onion/pepper mix, cheese, salsa, and roll up and serve. Make another, and serve.
