Salmon and Chive Creme Cheese

14 oz canned red salmon
  7 oz cream cheese at room temperature
  2 tablespoons sour cream
  1 tablespoon lemon juice
  1 bunch spring onions chopped
  2 bunch chives snipped
     freshly ground black pepper
1/3 cup pecan pieces

Drain salmon & flake into pieces

Beat cream cheese, sour cream & lemon juice until smooth.

Add spring onions quarter of chives and season with pepper

Fold nuts through with salmon

Place mixture onto a sheet of plastic wrap & roll into a log.

Chill until firm

Place remaining chives on clean sheet of greaseproof paper.

Unwrap salmon log and roll in the chives to coat.

Serve with crackers

Serves 4 to 6 as appetizer.
