Dougy Fried Duck

2 Servings 

1 whole duck, Breasted
1 cup cracker crumbs
4 tablespoons flour
1 egg, beaten
1 stick butter
salt and pepper

Slice duck breasts long ways into ~1/2 inch slices. Add salt and pepper to beaten egg. Place the flour in a plastic bag. Place slices of duck in bag and shake, cover evenly. Dip floured slices into egg wash. Press cracker crumbs into slices of duck breasts.

Fry slices in butter till golden brown over medium heat. Drain on paper towels.

Hang on to your heart valve. The cholesterol is through the roof. But, man is it good.
