1/4 cup corn meal
1/4 cup flour
1 TSP salt
1/2 TSP black pepper
1/2 TSP cayenne pepper
1/2 TSP paprika
1/4 cup finely ground pecans
Put all ingredients in a bowl and mix very well. Place in a large resealable plastic bag so that you will have a breading bag for your filets. Be sure to preheat oil so that you have hot oil available before placing filets in the oil. If you preheat the pan before adding oil you will greatly reduce the chances of the filets sticking.
