Fried Chicken

Crunchy Fried Chicken

1 C flour
1/2 tsp salt
1/4 tsp pepper
2 eggs
1/2 C beer
8 chicken pieces
oil for frying

Mix flour , salt & pepper. Beat the eggs with the beer. Add to flour mixture, stirring until smooth. Dip the chicken in the batter & chill one hour. Fry in 1/2-1 inch deep oil, 15 minutes on one side. Turn & fry 5- 10 minutes. Drain.


Cornmeal Batter Fried Chicken

2 1/2-3 lbs chicken pieces
3/4 C flour
1/2 C cornmeal
1 tsp salt
1/2 tsp baking powder
1/4 tsp poultry seasoning
1/8 tsp garlic powder
dash cayenne
1 beaten egg
1 C milk or 1 1/4 C buttermilk
2 Tbsp oil
oil for deep frying

In large pot, cover chicken with lightly salted water. Bring to a boil. Reduce heat, cover & simmer 20 minutes. Drain & pat dry. Combine all dry ingredients. Mix 2 Tbsp oil with egg & milk and combine with dry ingredients, beating until smooth. Dip chicken in batter & fry in deep oil until golden, just a few minutes. Drain.


Oven Fried Chicken With Honey Butter Sauce

1 C flour
1 tsp salt
1/4 tsp pepper
2 tsp paprika
8 chicken pieces
1 stick of butter, melted
Sauce:
4 Tbsp butter
1/4 C honey
1/4 C lemon juice

Preheat oven to 400 degrees. Combine dry ingredients. Dredge chicken in mixture. Pour melted butter in 13x9 pan. Add chicken & turn to coat with butter. Bake 30 minutes. Make sauce by melting the butter & beating in honey & lemon juice. Turn chicken over, pour sauce on & bake 30 minutes more.


Fried Pecan Crusted Chicken

2 whole chicken breasts, halved
2 Tbsp maple syrup
1 C pecans, coarsely chopped
3 Tbsp flour
1 tsp salt
2 Tbsp butter
2 Tbsp oil

Brush chicken with syrup. Combine dry ingredients & coat chicken with mixture. Heat butter & oil in skillet. Cook chicken 12-15 minutes, turning once, until browned. Add more oil if needed.

2 C Cap N Crunch cereal, crushed into crumbs
1/2 C cornflake crumbs
1/2 tsp onion powder
1/2 tsp garlic powder
1/2 tsp salt
1/4 tsp white pepper
1 egg, beaten
1 C milk
2 whole chicken breasts, cut in strips
oil for frying

Combine dry ingredients. Combine egg & milk. Dip chicken in egg, then coat with cereal. Heat oil & fry chicken until crispy & browned. Drain.
