This is a table sauce that goes good with dipping chips. It is not too hot but very flavorful. The cumin makes the sauce slightly resemble the taste of chili. I use hatch chiles in this sauce.
Ingredients:
12 fresh whole New Mexico chiles, red and green, destemmed and seeded
3/4 cup dried and ground fine Hot New Mexico chiles
1 bunch chopped green onions - including greens
28 ounces canned peeled tomatoes
2 teaspoons sugar
2 teaspoons salt
2 tablespoons dried cilantro
4 teaspoons red wine vinegar
1 teaspoon ground cumin seed
1 cup water
Preparation:
Wash and remove seeds and stems from fresh chiles.
Finely chop green onions including greens.
Put chopped onions, peppers, and tomatoes into a blender or food processor and chop.
Pour mixture into saucepan and add sugar, salt, cilantro, vinegar, cumin, and water.
Heat on stove at medium temperature for 10 minutes. Stir when needed.
Stir in ground dried chile powder.
Cook on medium while stirring for 15 minutes or until sauce has thickened.
Remove saucepan from burner and let cool to room temperature.
Pour sauce into blender or food processor and puree or mix to preference.
Final amount should constitute around 4 cups. Serves 6. Preparation time 1 hour.
