Easy Three-Step Enchilidas
(NAPSI)-There's more to make-at-home Mexican fare than crispy taco "sandwiches." It's time to move up to enchiladas-they're just as easy to make and feature many of the familiar flavors your family already loves.
This Easy Beef Enchiladas recipe requires only four basic ingredients. But you can make the enchiladas your own way by adding your favorite ingredients to the filling.
Instead of corn tortillas, the recipe uses flour tortillas, which are easier to fill and roll for enchiladas. And, it calls for a new, convenient 19-oz. can of enchilada sauce that's just the right amount for a large casserole dish, or you can use two 10-oz. cans. Keep extra sauce in the cupboard to make enchiladas whenever your
taste buds yearn for something Mexican.
Easy Beef Enchiladas (makes 12)
1 lb. ground beef
1 (19-oz.) or 2 (10-oz.) cans Old El Paso Enchilada Sauce
6 oz. (1 1/2 cups) shredded cheese
1 (12-ct.) pkg. Old El Paso Flour Tortillas for Soft Taco
- Heat oven to 400¡ degrees F. Brown ground beef over medium-high heat until thoroughly cooked; drain. Stir in 3/4 cup enchilada sauce and 1 cup cheese.
- Spoon enchilada filling onto tortillas; roll up and place seam-side down in lightly greased 13x9x2-inch baking dish.
- Pour remaining enchilada sauce over top; sprinkle with remaining 1/2 cup cheese. Bake at 400 degrees F. for 15 to 20 minutes.
VARIATIONS (add either or both of the following ingredients):
Stir 1 (4.5-oz.) can Old El Paso Chopped Green Chiles into filling mixture.
Add 1/2 cup chopped onion to ground beef while browning.
