Meat Loaf (Crock Pot)
1/2 Cup milk
2 slices bread
1-1/2 lb. ground beef
2 eggs
2-1/2 Tbsp tomato paste
1 onion, minced
1 1/2 tsp salt
1/2 tsp pepper
1-1/2 tsp dry mustard
1 can (12 oz.) tomatoes
Pour milk over bread on large plate. Allow to stand until bread has absorbed all of milk. Break up bread with fork. Mix bread & meat
Beat eggs with tomato paste. Add to meat & mix well
Blend in onion, salt, pepper, and mustard.
Form meat mix in round loaf & put in crock pot
Pour tomatoes with liquid over meat loaf
Cover, cook on low for 5-7 hours
Turn crock pot to high
Cook uncovered until liquid is slightly reduced
Serves 4-6
