I ran across this method on the web last week, so tried it last night...I used a 3 lb fryer...and it turned out wonderful cooked this way...
You do not add any liquid with the chicken
1 (2-1/2 to 3-1/2 lb) whole chicken
lemon wedge (optional)
1 bay leaf (optional)
salt & pepper
Remove giblets from interior of chicken; remove fat pads of either side of the opening to interior of chicken
Wash chicken in cold water; shake off excess water
Place lemon wedge and bay leaf in interior of chicken
Salt & pepper chicken
Place breast side up in crockpot
Cover and cook on low for 7 to 8-1/2 hours
Note:
If you plan to serve chicken pieces rather than cutting up and using in other dishes, sprinkle top of chicken with seasoned salt, like Lawry's, to give more color
To make broth:
Remove chicken from crockpot with slotted spoon or slotted spatula. Strain broth, place broth in refrigerator to solidify fat and remove from top of broth before using.
Makes about 2 cups broth to use in soup or other dishes
