Crockpot Chicken Parmigiana
3 whole chicken breasts (or 6 halves)
1 egg
1 tsp salt
1/4 tsp black pepper
1 cup dry bread crumbs
1/2 cup butter or margarine
1 small eggplant, peel, cut in 3/4" slices
1 can (10-1/2 oz) pizza sauce
6 slices Mozzarella cheese
Parmesan cheese
Cut whole chicken breasts in half
In bowl, beat egg, salt & pepper
Dip chicken in egg & coat with crumbs
In lg. skillet, sauté chicken in butter or margarine
Arrange chicken & eggplant in crockpot with eggplant on bottom
Pour pizza sauce over chicken
Cover, cook on low 6-8 hours
Add mozzarella cheese 15 minutes before serving
Top with Parmesan cheese
