- 4 cups water
- 1 teaspoon dried thyme leaves
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 2 cans (14 1/2 ounces each) vegetable broth
- 2 medium carrots, cut into 1/2-inch pieces (1
cup)
- 1 medium potato, peeled and cut into 1/2-inch
pieces (1 cup)
- 1 medium onion, finely chopped (1/2 cup)
- 1 medium celery stalk, cut into 1/2-inch pieces
- 16 oz lentils (2 1/4 cups), rinsed
- 6 oz sliced Canadian-style bacon, coarsely
chopped
Mix all ingredients in a crockpot. Cover and
cook on low heat setting 8 to 9 hours or until lentils are tender.
Stir well before serving
