Crock Pot Tomato Sauce
This can be Canned or Frozen
2 tbls. olive or vegetable oil
3 medium carrots diced (=2 cups)
4 medium onions diced (=2 cups)
1 medium green pepper diced (=1 cup)
2 cloves chopped garlic
8 lg. tomatoes
1 can (6 ounces) tomato paste
2 tbls. brown sugar
1 teas. salt
2 teas. dried oregano leaves
2 teas. dried basil leaves
1/2 teas. pepper
Heat oil in 12" skillet over med. heat.
Cook onions, carrots, green pepper and garlic, till tender.
Place mixture and remaining ingredients in a 5 quart crockpot; cook on high heat setting for 8 hrs.
When done, divide into 2 cup portions and freeze for later use.
You may can this in pint sized jars
Makes approximately 12 cups of sauce
