Cranberry Pork Roast

4 medium potatoes, peeled & cut into 1" chunks
3 lb boneless center-cut pork loin roast, rolled & tied
1 can (16 oz) whole cranberry sauce
1 can (5.5 oz) apricot nectar
1 medium onion, coarsely chopped
1/2 cup coarsely chopped dried apricots
1/2 cup sugar
1 tsp dry mustard
1/4 tsp crushed red pepper
Place potatoes into a 3-1/2 quart (or larger) slow cooker
Place roast over potatoes
In a large bowl, combine remaining ingredients, mix well and pour over roast
Cover and cook on low setting for 5 to 6 hours
Remove roast to cutting board and thinly slice
Serve with the potatoes and sauce
