Pulled Pork Sandwiches

[Can cook roast as called for, and serve with commercial barbecue sauce, or prepare the sauce recipe that follows].

    Pulled Pork:
  • 2-1/2 to 3 lb pork loin roast*
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 Tbsp cooking oil
  • 2 medium onion, coarsley chopped or cut into thin wedges
  • 2 Tbsp minced garlic
  • 1 cup root beer*
  • Hamburger buns, split (and toasted, if desired)
  • Lettuce leaves (optional)
  • Tomatoes (optional)
  • Trim fat from meat. If necessary, cut roast to fit into crockery cooker
  • Sprinkle meat with salt and pepper
  • In a large skillet, brown roast on all sides in hot oil. Drain
  • Transfer meat to crockpot
  • Add onions, the root beer and garlic
  • Cover; cook on low-heat setting for 8 to 10 hours (or on high-heat setting for 4 to 5 hours)
    *[NOTE: I used pork shoulder roast (it was on sale) when preparing this and for for the 1 cup root beer, I went ahead and added a whole 12oz can A&W brand].
  • When roast is cooked, transfer to a cutting board or serving platter
  • With a slotted spoon, remove onions from juices and place on serving plate. Discard juices
  • Using two forks, pull meat apart into shreds ("Pulled" or shredded pork is a specialty of Southern barbecues. To prepare pork, hold meat steady with one fork and pull into shreds with the other).
  • To serve, line hamburger buns with lettuce and tomato slices (if desired)
  • Add meat and onions; spoon on commercial barbecue sauce or sauce made from recipe below
Makes 8 to 10 servings
SAUCE:
  • 3 cups root beer* (two cans or bottles)
  • 1 cup bottled chili sauce*
  • 1/4 tsp root beer concentrate* (optional)
  • several dashes bottled hot pepper sauce* (optional)
  • For sauce, in medium saucepan, combine the 2 cans (or bottles) of root beer and bottled chili sauce
  • Bring to boiling; reduce heat
  • Boil gently, uncovered, stirring occasionally, about 30 minues or until mixture is reduced to 2 cups. (Add root beer concentrate and bottled hot sauce, if desired)
  • Spoon over pork sandwiches
    *[NOTE; I used A&W root beer. I did add the root beer concentrate (extract), but did not add the hot pepper sauce. Also, I used Del Monte Chili Sauce, but I'm sure any good brand will do].
