Crockpot Beef Sandwiches


  • 1 2 lb boneless beef roast (your choice)
  • 2 large green bell peppers, chopped
  • 2 large red bell peppers, chopped
  • 3 small onions, peeled & chopped
  • 1 can Hunts Italian chunky tomato sauce
  • Italian mixed herbs to taste
  • garlic powder to taste
  • salt to taste
  • pepper to taste
  • 3 tab balsamic vinegar
  • Roughly chop the peppers & onions and put into the bottom of a 5 qt crockpot
  • Lay roast on top and cover with the tomato sauce, seasonings & vinegar
  • Cook on low 8-10 hours
  • Shred beef & serve on crusty bread with the peppers and onions & melted Mozzarella/Parmesan cheese White bread made in the bread machine with 2 teas Italian herbs and 3 oz grated Parmesan cheese (1 1/2 lb loaf) is good with this. It would also be good served over pasta or rice
