Snowball Loaf
2 pkgs active dry yeast
1/4 c water
1 c milk, scalded
1/2 c sugar
1/4 c shortening
1 1/2 tsp salt
4-4 1/2 c flour
1 tsp grated lemon peel
2 beaten eggs
1 c mixed diced candied fruits
Soften yeast in warm water.
Combine milk, sugar, shortening and salt. Cool to lukewarm.
Add about 2 c flour, and the lemon peel, beat till smooth.
Add eggs, beat well.
Stir in yeast. Add fruits. Stir in remaining flour to make soft dough.
Cover; let rest 10 minutes
Knead on lightly floured surface till smooth and elastic. (about 6 minutes)
Place in lightly greased bowl, turning once to grease surface. Cover, let rise in warm place till double in bulk (about 2 hours)
Punch down. Divide dough in half.
Cover; let rest 10 minutes.
Shape in 2 balls.
Place on greased cookie sheet; pat tops to flatten slightly.
Cover; let rise till almost double
Bake 350° 25-30 minutes
While warm can frost with Powdered sugar frosting, trim with candied fruit.
