Almond Wafersfence

I love these cookies. I enjoy them most after everyone has gone home, and I have them with my favorite coffee....sooo relaxing...enjoy!
  • 1/2 cup unsalted butter
  • 1/2 cup sugar
  • 1/2 tsp almond extract
  • 1/2 cup sifted all purpose flour
  • 1/2 cup ground almonds

  • Preheat oven to 375°
  • Lightly grease or spray cookie sheets
  • Cream butter and sugar on medium speed until light, about 2 minutes
  • Blend in almond extract
  • Stir in flour and mix well to make a thick batter
  • Stir in almonds
  • Drop batter by teaspoonfuls, 2 inches apart, on cookie sheets. If batter is too thick, add water by tablespoonful, until batter is loose enough to drop from a spoon onto the pan
  • Bake for 6-7 minutes or until cookies are golden around the edges
  • Cool cookies for 5 minutes on cookie sheet, then remove to wire racks to cool completely
