Holiday Treasure Cookies
1-1/2 cups graham cracker crumbs
1/2 cup all purpose flour
2 tsp baking powder
1 can (14 oz) Eagle Brand Sweetened Condensed milk
1/2 cup margarine or butter (not non-fat), softened
1 can (3-1/2 oz) flaked coconut, or 1-1/3 cup fresh flaked coconut
1 pkg (12 oz) semi-sweet chocolate chips (2 cups)
1 cup chopped walnuts, or chopped pecans
2/3 cup raisins (my own addition)
Heat oven to 375°
In small bowl, mix graham cracker crumbs, flour and baking powder
In large mixer bowl, beat sweetened condensed milk and margarine until smooth
Add graham cracker mixture; mix well
Stir in coconut, chocolate chips, nuts, and if desired, raisins; mix well
Drop by rounded tablespoons onto ungreased cookie sheet (allow room to spread)
Bake 9 to 10 minuts or until lightly browned
Store loosely covered at room temperature
Unused mixture can be rolled into 'logs' and stored in freezer for future use
