1 cup sugar
2 tsp finely grated lemon peel
1 cup lemon juice (5 large lemons)
3 Tbsp firm margarine or butter, cut up
3 eggs beaten slightly
Mix sugar, lemon peel and juice in a heavy 1-1/2 quart pan
Stir in margarine & eggs
Cook, over medium heat
Stir constantly until mixture thickens and coats back of spoon, approximately 15 minutes
