Scottish Shortbread
'Christmas would not be Christmas at my house without my grandmother's shortbread'
1 stick of butter, room temp
1 cup flour
1/2 cup sugar
Preheat oven to 300°
Grease and flour 8x8 pan
Break butter into small pieces
Beat together with sugar
Sift flour and work mixture into a paste
Knead until well mixed....do not overwork
Remove from bowl and press into an 8x8 pan
Sprinkle with a little sugar; prick 5 or 6 times
Bake on high shelf approximately 30 minutes until light in color (not brown
Cut into pieces while stile warm
