'Many fruit cake "haters" love this cake. I've been
making it for about 30 years now and we look forward
to it every Christmas. It doesn't have any of the
bitter taste some fruit cakes have, so children are
much more likely to like it...'
1 lb vanilla wafers
1 lb shelled pecans
1 lb shelled walnuts
1 lb pitted dates
1/2 lb candied cherries
1/2 lb candied pineapple
1 lb marshmallows
1 small can evaporated milk
Roll wafers into coarse crumbs
Cut nuts and fruit into small pieces
In a large pan, melt marshmallows with milk over
low heat, folding over and over
Remove from heat
Add crumbs and fruit mixture
Mix thoroughly
Wet hands and shape mixture into pan or mold
Remove from pan and refrigerate until firm
Slice thinly
This cake keeps for weeks in the refrigerator or for
months in the freezer
