Holiday Roast Duck
1 (4-5 lb.) duckling
Glaze:
1/2 C. fresh orange juice
2 T. chopped fresh sage
1/2 C. plus 1 T. orange marmalade
1-1/2 T. brandy
Place ducking on rack, breast side up, in a roasting pan.
Roast at 350º to a minimum temperature of 180' degrees (a 5 lb. duckling will take about 2-1/2 hours)
Meanwhile over high heat, boil the orange juice and sage till reduced to 1/4 Cup
Add remaining ingredients and simmer till thick and bubbly, about 2-3 minutes, stirring frequently to avoid burning
Keep warm till ready to use
Brush duckling with glaze during the last half hour of cooking
Serves 3-4
