Pepperoni Ripieni/Stuffed Green Peppers


  • 1 lb. ground beef
  • 1/4 lb. ground pork
  • 1 medium onion, minced
  • 1 egg, beaten
  • 6 medium-sized green peppers, tops cut off and insides removed
  • 1 cup long grain rice, partially cooked and drained
  • 1 large can tomatoes or 1 large can of tomato paste diluted
  • pinch of nutmeg (optional)
  • salt and pepper to taste

    Mix beef, pork, onion, egg, salt and pepper to taste, and nutmeg if desired, in a large bowl. Add rice and blend thoroughly. Stuff the green pepper with filling and place in baking dish. Pour tomotoes over peppers and bake uncovered at 325 degrees for 45 minutes, or until done.
