Merluzzo/Codfish in White Sauce


  • 1 lb. salted codfish
  • 1/4 cup Mazola oil
  • 1 stick of butter
  • 1 medium onion, chopped

    Soak overnight 1 pound salted codfish. Drain. Combine 1/4 Mazola oil and 1 stick of butter in fry pan. Add onions and let brown. Add drained codfish and place lid on pan and let simmer 1/2 hour. Remove lid and let brown evenly. May be placed in oven for short while at low heat before serving.

    Note: 1/2 cup white wine may be added for a different flavor or1 pint coffee cream may be added for creamed codfish, or tomato sauce may also be added for a different dish.
