Chicken Cacciatore


  • 3 lbs.chicken pieces
  • 4 tablespoons olive oil
  • 2 cloves garlic, crushed
  • 2 onions, minced
  • 3 tomatoes, peeled and minced
  • 1 tsp. tomato paste,dissolved in 1/2 cup water
  • salt and pepper to taste

    Brown onion over a low flame in a pot with the olive oil. Add the minced tomatoes, and the tomato paste which has been dissolved in water; season with salt, pepper and garlic. Cook about 45 minutes over medium flame. When the liquid has boiled down to the desired consistency, and the chicken is cooked, remove from fire and serve hot.
