Pollo in Umido/Italian Stewed Chicken


  • 2 1/2 lb. chicken
  • 1 medium onion, chopped
  • 1/2 stick butter
  • 4 tablespoons cooking oil
  • 1/2 piece of celery
  • 2 tablespoons tomato paste
  • sage (optional)
  • salt and pepper

    Simmer onion in butter and oil. Add tomato paste and other ingredients. Add enough water to cover chicken and cook slowly for 1 1/2 hours.

    SERVES: 4
