Pollo Cacciatore alla Perugina/Hunter's Chicken


  • 1 chicken, cut into pieces
  • 1/4 cup oil
  • 1/4 cup butter
  • 2 cups white wine
  • 3 cloves garlic
  • 1/2 teaspoon rosemary leaves
  • salt and pepper to taste
  • dash of nutmeg

    Cook chicken in oil and butter until well done.

    Mix wine, garlic, salt, pepper, nutmeg, and rosemary together and pour over browned chicken. Cover and simmer for 10 minutes.

    SERVES: 4
