"MICHELLE'S RED BEANS & RICE"

INGREDIENTS
1 lb Sausage 1 lb Bag Dry Red Beans
6-8 Cups of Water 1 Large Onion
1 Teaspoon Salt 4 Cups White Rice
Season to taste

Rince and sort beans. Bring water

and beans to a Boil in a 5 quart Dutch Oven.

Cut sausage into 1/2 inch slices and add to pot.

Add Onion, salt and other seasonings and cook on medium

heat for about one and a half hours or until beans are

tender. Add water when needed. Serve over rice.

Makes 6 servings.
