Chocolate Chip Cookies
These are the world’s best!
3/4 cup granulated sugar
1 cup brown sugar
1 cup butter
1 tablespoon vanilla extract
2 eggs, slightly beaten
3 cups all-purpose flour
3/4 teaspoon baking soda
3/4 teaspoon salt
3 cups semi-sweet chocolate chips
1 cup chopped nuts (optional)
Preheat oven oven to 350 degrees
In a large bowl, combine the white and brown sugars. Add butter and cream together with the sugar. Add vanilla and eggs, mixing well.
In a separate bowl, sift the flour, baking soda and salt together. Add dry mixture to the creamed mixture. Mix well; the dough will be stuff. Add the chocolate chips, and if desired, the nuts.
Line cookie sheets with baking parchment or wax paper. Using a small ice cream scoop, drop dough onto the cookie sheets. Bake 10-12 minutes. Remove from oven and cool on wire racks.
Makes 2-3 dozen
Buttercream Frosting
This icing tastes great on cookies & cakes!
4 tablespoons butter
1/2 cup solid shortening
pinch of salt
1/2 pond confectioners sugar (2 cups, loosely packed)
2 tablespoons water
1/2 teaspoon clear vanilla extract
Sift all dry ingredients into the bowl of an electric mixer. Add wet ingredients. Beat at low speed for two minutes. Scrape sides of bowl and continue beating at high speed for 6 minutes. Cover mixer with a moist towel while beating, as the sugar can be messy. Any left over icing can be stored in an air tight container, in the freezer for up to two weeks.
