Recipe Of The Month
Break out the cooking pans.... we're going to the kitchen! I am using this page to highlight some recipes I have tried and enjoy making. If you have something you would like to contribute, please Email me at Drewbear8383@hotmail.com and let me know! This month's Special Recipe is:

Chicken Marengo

1 tablespoon of olive oil
4 bone-in skinless chicken halves
1 tablespoon all-purpose flour
1 teaspoon dried basil leaves
1/4 teaspoon garlic powder
1/8 teaspoon pepper
1/2 cup dry white wine or chicken broth
2 tablespoons tomato paste
2 16 oz. cans regular or Italian whole tomatoes, (or 2 14.5 oz cans) drained, cut up
1/2 cup coarsley chopped green bell peppers
1 medium onion, cut into 8 thin wedges
1/4 cup halved or sliced pitted ripe olives

Heat large nonstick skillet over meduim-high heat until hot. Add oil; heat until it ripples. Add chicken breast halves; cook until browned on all sides.

In a medium bowl, combine flour, basil garlic powder, pepper, wine, and tomato paste; blend until smooth. Stir in tomatoes. Move chicken to the side of the skillet and add the tomato mixture. Place chicken, bone side up, in tomato mixture.

Bring to a boil. Reduce heat to medium low; cover and simmer 10 minuted, stirring occasionally.

Turn chicken over; stir in bell pepper and onion. Cover; cook and additional 8-10 minutes or until chicken is fork tender and juices run clear, stirring occasionally. Stir in olives.
