Recipe of the Month for May 1999 (whew, this is OLD)

In our house, warm weather means grilling. I haven't learned how to use the grill yet, but I plan to! Or maybe not...after all, it is the one time Jeff will actually cook...=) Here's one great recipe that came from the web somewhere, but I didn't print the whole page, just the text part. So sorry, can't provide you with the source of this recipe. But one taste and I'm sure you'll forgive me!

Grilled Garlic Lime Pork Tenderloin

6 large garlic cloves
2 Tbsp soy sauce
2 Tbsp grated fresh ginger
2 tsp honey-dijon mustard
1/3 C fresh lime juice (about 2 limes)
1/2 C olive oil
pepper to taste
1 or 2 pork tenderloins

In a food processor, combine all ingredients but the pork. Place pork in a zipper bag or container with a tight-fitting lid and pour marinade over meat. Put in fridge and let sit for 12-24 hours. Shake or turn over every so often.
Grill over medium heat for 25-30 minutes, turning every 5 minutes or so, until juices run clear and thickest part of the meat registers 160 on a thermometer. Let stand about 5 minutes before slicing and serving. Enjoy!
