2 cups flour
14-Karat Cake
2 tsp. baking powder
1 1/2 tsp. soda
1 1/2 tsp. salt
2 tsp. cinnamon
2 cups sugar
1 1/2 cups oil
4 eggs
2 cups grated carrots
8 1/2 oz. crushed pineapple, drained
1/2 cup nuts
3 1/2 oz. coconutSift together dry ingredients. Add oil and eggs; mix well. Add remaining 4 ingredients. Bake in 3 9-inch cake pans at 350 degrees F. for 35 to 40 minutes. Cool.
Frosting: 1/2 cup margarine
8 oz. cream cheese
1 tsp. vanilla
1 lb. powdered sugarMix margarine, cream cheese, and vanilla until smooth. Add powdered sugar. Spread on cooled cake.
