Herbed Baby Potatoes 1 1/2 lbs. new potatoes, unpeeled & quartered
2 tbsp. olive oil
1 tbsp. parsley
1/2 tsp. oregano
1/4 tsp. paprika
1/2 tsp. garlic powder
pepper, to taste
1 tbsp. parsley, to garnish
Preheat oven to 350.
In a 2-quart casserole, toss potatoes in oil to coat each piece. Add remaining ingredients, except parsley for garnish. Toss to coat evenly. Bake 30 to 40 minutes, or until lightly browned. Garnish with parsley, if desired.
