Pastry Shell:
Cheese Jalapeno Quiche
1 1/2 cups all-purpose flour
1/2 tsp. salt
1/4 cup, plus 2 tbsp. margarine
2 1/2 tbsp. water
Combine flour and salt. Cut in butter. Add water, mixing well. Roll out pastry shell. Bake at 400 degrees F. for 3 minutes.

1/3 lb. ham
3 oz. Swiss cheese, shredded
3 oz. Cheddar cheese, shredded
1 medium tomato, peeled & chopped
1 jalapeno pepper, canned, seeded & chopped
2 tbsp. mushrooms, chopped
1 tbsp. parsley
4 eggs, beaten
1 tsp. dry mustard
1/2 cup sour cream, lowfat
Layer next 9 ingredients in prepared pastry shell. Combine eggs, mustard and sour cream. Pour into shell. Bake at 450 degree F. for 30-35 minutes.
