Spicy Red Beans and Rice

1/2 lb. red beans
vegetable oil spray
1 large onion, finely chopped
2 large garlic cloves, finely minced
1 large green pepper, chopped
3 celery stalks, chopped
2 bay leaves
1 tsp. salt, or to taste
1/2 tsp. pepper, or to taste
1/2 tsp. red pepper
1 tsp. Italian seasoning
1/2 tsp. thyme
1 tsp. paprika
2 cups canned crushed tomatoes
1 cup vegetable broth, more, if necessary
1/4 tsp. hot pepper sauce
4 oz. smoked sausage, sliced and cooked
4 cups rice, cooked

Sort and wash beans. Let s oak in water for 8 hours.

Spray large saucepan with vegetable spray. Heat to medium-high. Saute onion, garlic, green peppers, and celery for 5 minutes. Add all the spices, tomatoes, and vegetable broth. Simmer for 10 minutes.

Add bean, sausage and hot pepper sauce. Cook uncovered on medium heat for 1 hour. Remove bay leaves and serve over rice.
