1 lb. or more lean ground beef
Super Duper Nachos
1 large onion, chopped
salt, to taste
Picante sauce
1 or 2 cans refried beans
4 oz. can green chilies, diced
2 or 3 cups Cheddar cheese, shredded
3/4 cup prepared taco sauce
1/4 cup green onions, chopped
1 cup pitted black olives, sliced
8 oz. avocado dip
sour cream
parsley
red bell pepper
corn chipsSaute meat and onions until browned; discard fat. Season with salt and picante sauce to taste. Spread beans in large, oblong glass dish. Top evenly with meat. Sprinkle beans and meat mixture evenly with diced chilies. Cover evenly with cheese; drizzle taco sauce over all. Bake uncovered at 400 degrees F. for 20 to 25 minutes, or until thoroughly hot. Remove from oven and quickly garnish with green onion and black olives. In center, mound avocado dip; or mound dip and sour cream side by side. Garnish with parsley and mild red pepper. Tuck corn chips around edges and serve at once. Serve with additional bowl of corn chips.
Note: You can make this dish ahead of time if you cover and refrigerate until ready to bake.
