Strawberry Pretzel Salad

Ingredients:

3/4 c. margarine(melted) 6oz. pkg. strawberry Jell-O
2 c.pretzels (crushed) 2 c. hot water
8. oz. pkg. cream cheese 2 pkgs. frozen (16oz.) strawberries
1 c. powdered sugar 9 oz. Cool Whip

Snicker's Cake

Ingredients:

1 pkg. german chocolate cake mix 6 oz. chocolate chips
1/4 cup milk 1 cube butter or marg.
1 pkg. Kraft caramels 1 cup salted peanuts

Directions:

Mix cake as directed on package. Pour 1/2 the mixture in a greased and floured 9x13 pan and bake at 350º degrees for 20 min. While cake is baking, melt the caramels, butter and milk together. Slightly chop the nuts.

When cake is done, remove from oven and pour caramel mixture over the top. Cover with chocolate chips, peanuts, and spread the remaining cake mix over the top. Bake for 20-30 min. at 350º. Let cool about 2 hours, then cut into squares.

Chicken or Beef Enchilada Casserole

Ingredients:

6-8 chicken breast,cooked &chopped; or 1 small can green chiles, chopped (no seeds)
2 pounds ground round, browned 1 (32oz.) can red enchilada sauce
1 small onion, diced 1 (16oz) can tomato sauce
2 to 3 garlic cloves, minced 1 dozen corn tortillas, chopped
1 (16oz.) can olives, chopped 2 cups Cheddar cheese, shredded
2 cups Monterey Jack cheese, shredded  

Directions:

Cook meat,onion and garlic until done. If using the cooked chicken, sauté the onion and garlic until transparent; add the chicken, olives, chiles, enchilada sauce to make the filling. In a 9x13 casserole dish, layer 1/2 chopped tortillas, 1/2 meat filling, 1/2 the cheese. Repeat. Bake at 350° for 45 minutes.

Broccolli salad

Ingredients:

3/4 cups mayonnaise 1 medium red onion, chopped
2 Tbsp. sugar 1/2 1b. bacon,cooked crisp & crumbled
2 Tbsp. vinegar 1 cup sunflower seeds
1 large bunch broccoli, raw 1/2 cup raisins

Directions:

In a large bowl, combine mayonnaise, sugar and vinegar. Cut broccoli into small pieces and add to dressing. Add bacon pieces, onion, sunglower seeds and raisins. Mix well and refrigerate. Serve the same day or next.

Mom's Rice Pilaf

Ingredients:

1 cup Uncle Ben's Converted rice 1 coil vermicelli
1 cube butter 2 1/4 cup broth

Directions:

Brown the vermicelli in butter, in a sauce pan, add liquid, bring to boil, add rice. Mix well, and let simmer ofr approximately 20 minutes. Add salt and pepper to taste. Mix again before serving.

Kahlua Cake

Ingredients:

1 box dark choc. cake mix 4 beaten eggs
1/2 cup vegetable oil 1/2 cup Kahlua
1 sm. pkg. inst. vanilla pudding 1/2 cup water
16 oz. sour cream  

Directions:

Mix preceding ingredients well and pour into a greased(Pam) bundt pan. Bake 35 minutes in a preheated 350° oven. Test with toothpick. When cake is cooled sprinkle with powdered sugar.

M&Ms© Cookie Mix in a jar

Ingredients:

1 ¼ cups white sugar 2 cups all-purpose flour
1 ¼ cups M&M's plain ½ teaspoon baking soda
½ teaspoon baking powder  

Directions:

Mix together flour, baking soda and baking powder. Layer ingredients in jar, in order given, in a 1 quart "wide-mouth" canning jar. Add the flour mixture last. It will be a tight fit when you add the flour mixture so be sure to pack everything down firmly. Instructions to attach to jar:
M&Ms© Cookies. Empty jar of cookie mix into large mixing bowl. Use your hands to thoroughly blend mix. Add ½ cup margaring or butter, softened at room temperature. Mix in 1 eff, slightly beaten, and 1 teaspoon vanilla. Mix until completely blended. You will need to finish mixing with your hands. Shape into balls the size of walnuts and place on a parchment lined cookie sheet, 2 inches apart. DO NOT USE WAXED PAPER. Bake at 375° for 12 to 14 minutes until edges are slightly browned. Cool on cookie sheet for about 5 minutes, then remove to wire racks to finish cooling. Makes 2 ½ dozen cookies.

Layered Chocolate Cream Pie

Ingredients:

Crust:

1 1/2 c. flour 1 cup chopped walnuts
1 1/2 cubes margarine, melted

Use a 9x14. Combine ingredients and press on bottom. Bake at 325 for 20-30 minutes. Cool completely.

First Layer:

1 c. powdered sugar 8 oz. cream cheese
8 oz. cool whip  

Mix well and spread on cooled crust.

Second Layer:

2 cups milk 2- 3 oz. instant vanilla pudding

Mix the milk with the pudding. Spread on the cream cheese layer. Spread 1- 8oz. Cool Whip on top of pie. Grate a chocolate bar on top.


BROWNIE MIX IN A JAR

Ingredients: 
    2 1/4 cups white sugar
    2/3 cup unsweetened cocoa powder
    1/2 cup chopped pecans
    1 1/4 cups all-purpose flour
    1 teaspoon baking powder
    1 teaspoon salt

Directions: 
    1 Pour sugar into a clean and dry one quart jar. Press down firmly. 
    2 Add cocoa powder and press down firmly. Pour in chopped         pecans, making sure pecans are evenly layered in the jar. Combine flour, baking powder and salt. Pour into jar and seal. 
    3 Attach the following directions to the jar: Empty mix into large bowl. Use your hands to mix thoroughly. Add 3/4 cup of butter or margarine and 4 slightly beaten eggs. Mix until completely blended. Spread batter into a lightly greased or sprayed 9 x 13 inch pan. Bake at 350 degrees F (180 degrees C) for 30 minutes or until done. Cool in pan. Cut into 2 inch squares. 
Makes 2 dozen

    2 1/2 cups all purpose unbleached flour
    3/4 cup white sugar
    3/4 cup packed brown sugar
    1/2 tsp. baking soda
    1 cup chocolate chips     


Instructions: 

1. Combine flour and baking soda - stir well. Place flour mixture in a clean mason jar. Pack down tight so everything will fit in the jar. (Use a spoon or a mallet.) Add white sugar and pack down, then add brown sugar and pack down. Finally, add chocolate chips. 
2. Put the lid on the jar and tie a ribbon around the lid. You can add a personalized label, if you wish. As an added touch, tie a wooden spoon to the lid with a piece of ribbon. 
3. Print out the following instructions on a gift card and tape the card to the jar: 

"Whip 1 cup of butter until light and fluffy. Add 2 eggs and 1 tsp. vanilla and beat until mixed. Stir in the ingredients from this jar until well combined. Drop 1 Tbsps of dough on a greased cookie sheet. Bake for 8 to 10 minutes at 350 degrees F." Share with a friend.



Oatmeal Raisin 

1/2 cup sugar
1/2 cup packed brown sugar
1 cup flour
1 teaspoon baking powder
1/4 teaspoon salt
1 1/4 cup raisins
1 1/4 cup oats 

Instructions: 

1. Combine flour, salt and baking soda - stir well. Place flour mixture in a clean mason jar. Pack down tight so everything will fit in the jar. (Use a spoon or a mallet.) Add other ingredients, one item at a time, packing each layer down. 
2. Put the lid on the jar and tie a ribbon around the lid. You can add a personalized label, if you wish. As an added touch, tie a wooden spoon to the lid with a piece of ribbon. 
3. Print out the following instructions on a gift card and tape the card to the jar: 

"Whip 1/2 cup of butter until light and fluffy. Add 1 egg and 1 tsp. vanilla and beat until mixed. Stir in the ingredients from this jar until well combined. Drop 1 Tbsps of dough on a greased cookie sheet. Bake for 15 minutes at 350 degrees F."

1 cup brown sugar

3/4 teaspoon ground cinnamon
3/4 cup raisins
3/4 cup chopped nuts 

Instructions: 

1. Combine flour, salt, cinnamon and baking soda - stir well. Place flour mixture in a clean mason jar. Pack down tight so everything will fit in the jar. (Use a spoon or a mallet.) Add other ingredients, one item at a time, packing each layer down. 
2. Put the lid on the jar and tie a ribbon around the lid. You can add a personalized label, if you wish. As an added touch, tie a wooden spoon to the lid with a piece of ribbon.

1 1/4 cups white sugar
1/4 teaspoon salt
2 1/2 cups coconut
1 1/2 cups corn flake cereal

2. Put the lid on the jar and tie a ribbon around the lid. You can add a personalized label, if you wish. As an added touch, tie a wooden spoon to the lid with a piece of ribbon.

Spicy Ginger Cookies 

4 cups flour
3/4 teaspoon baking soda
1 teaspoon ground ginger
1 1/2 teaspoons ground cinnamon
1 1/2 teaspoons ground cloves
1/2 teaspoon salt
1/2 cup molasses
1 1/4 cups sugar 

Instructions: 
1. Combine flour, spices, salt, and baking soda - stir well. Place flour mixture in a clean mason jar. Pack down tight so everything will fit in the jar. (Use a spoon or a mallet.) Add other ingredients, one item at a time, packing each layer down. 
2. Put the lid on the jar and tie a ribbon around the lid. You can add a personalized label, if you wish. As an added touch, tie a wooden spoon to the lid with a piece of ribbon.

Orange Cookies 

1 1/2 cups brown sugar
1 Tbsp. dried grated orange rind
1 teaspoon vanilla extract
3 teaspoons baking powder
3 1/4 cups all-purpose flour 

Instructions: 
1. Combine flour, baking powder and orange rind - stir well. Place flour mixture in a clean mason jar. Pack down tight so everything will fit in the jar. (Use a spoon or a mallet.) Add other ingredients, one item at a time, packing each layer down. 
2. Put the lid on the jar and tie a ribbon around the lid. You can add a personalized label, if you wish. As an added touch, tie a wooden spoon to the lid with a piece of ribbon. 
3. Print out the following instructions on a gift card and tape the card to the jar: 
"Whip 1 cup of butter or shortening until light and fluffy. Add 2 eggs, 1/2 cup sour cream and 1 tsp. vanilla and beat until mixed. Stir in the ingredients from this jar until well combined. 1 1/4 cups white sugar
1/4 cup colored decorating sugar
2 1/2 teaspoons baking powder
1/2 teaspoon salt 

Instructions: 
1. Combine flour, salt and baking powder - stir well. Place flour mixture in a clean mason jar. Pack down tight so everything will fit in the jar. (Use a spoon or a mallet.) Stir sugar and colored sugar together, add to the jar. 
2. Put the lid on the jar and tie a ribbon around the lid. You can add a personalized label, if you wish. As an added touch, tie a wooden spoon to the lid with a piece of ribbon. 
3. Print out the following instructions on a gift card and tape the card to the jar: 
"Whip 2/3 cup of butter or shortening until light and fluffy. Add 2 eggs, 2 Tbsp. milk and 1 tsp. vanilla and beat until mixed. Stir in the ingredients from this jar until well combined. Roll into small balls and place on a greased cookie sheet. Flatten each ball slightly with a fork or the bottom of a glass. Bake for 8 minutes at 350 degrees F."
