"With a 'pinch' of Family History"

"Families often gather around tables and tell stories, or talk about their daily activities.   This makes the family closer.   You could say that much of what makes a family what it is, revolves around food.  In fact, when you think of a particular food it often brings back to mind some event that occurred around the time you ate that food, at one point in your life.   Here are some of our favorite recipes.   We also will share a 'pinch' about this, and a 'pinch' about that, of our family and friends."

"Shrimp Dip"

(Tart and Tasty Dip)

Ingredients
1-3 oz. pkg. creamed cheese softened
1 cup sour cream
1 pkg. Italian salad mix (dehydrated)
2 cans cocktail shrimp (broken)
    *Drained and rinsed under water
2 Tblsp. diced green pepper
4 Tblsp. lemon juice

Instructions
Chill at least one hour before serving.

Just before a Gathering

It seemed that it was only when we were going to have guests over that mom would make shrimp dip.   Oh, how I loved that dip!   It was the worst temptation not to grab a Ritz cracker, and finish half the bowl before everyone showed up.

Bread
Menu
Zucchini Bread

("Eldeens" - makes two loafs)

Ingredients
3 cups flour
3 beaten eggs
1 cup oil
2 1/4 cups sugar (less if desired)
2 cups grated or shredded zucchini
1 teasp. vanilla
1 teasp. salt
1 teasp. soda
3 teasp. cinnamon
1/4 teasp. baking powder
1 cup nuts

Instructions
Bake at 350 for 50 min.

Bread for the Weekend

After a long week of going to school or going to work from Monday through Friday, we usually would come home to a loaf of zucchini bread. Mom either made it during the previous night or during the day. Most of the time she would stay up late cooking, and I would talk to her until she fell half asleep. All of a sudden she would jump up and run to the kitchen to check on her baked goodies. Then she would come back, take a deep 'sigh', and doze off until the next check.

When I was really young, I remember Saturday mornings. After going out in the field ministry (preaching with our Bibles), mom would have some of her girlfriends over and have coffee and zucchini bread. The bread never thrilled me much.

Refried Chuck Roast

(All American Breakfast)

Ingredients
Leftover refried chuck roast with potatoes and carrots.
    *See the supper section for the recipe of chuck roast.

Instructions
Cook in a skillet with butter until crispy.

Going to School

Every day my mother would get up extra early in the morning to prepare breakfast for us. Sometimes it was simple, sometimes it was extraordinary. But the extra effort and attention was always appreciated.

My favorite breakfast was hot toast and peanut butter, or leftover cold pizza.

Menu
Papst Soup

(Family Meal when times are hard)

Ingredients
Potatoes
Flour
Water
Hot dogs (If you can afford it)

Instructions
Boil water.   Add flour gradually until thickens.
Cut potatoes in diced pieces and add to mixture.
Cut hot dogs in quarters and add to mixture.
Allow to simmer and thicken for 1 hr.   Spice to taste.

Life on the Fruit Family Farm

Mom would tell us stories of her experiences as a youth.
Her parents had ten children all together, six girls and four boys.   Sometimes it was necessary to make a meal that would go a long way, and this was one of them.

I used to love to listen to my mom saying, "When I was a child..." and she would begin to relate what she learned from an experience she had with her mother sharing candy, or with walking to school with her brothers and sisters during the winter, etc.

One story I remember was when they would all be at the table for a meal, and one of the kids, (often Aunt Sandy) would act up and giggle.   Grandpa Fruit would look down from the head of the table and give a look that you know you better behave or else he was going to come over, and you didn't want that to happen.   If he stood up, all the kids near the guilty one would cringe because you knew you were going to get it, even if you weren't guilty.   He would give you a spanking and send you to bed without supper.   Sometimes, Sandy would give a little giggle after being punished and you would hear Grandpa say, "Keep it down over there".  

Mom always expressed her appreciation for her parents to care enough to discipline them.   This was a sign of love, and a desire for them to turn out to be good children.   And they were successful.

Supper (Dinner)
Menu
Never Fail Noodles

(A Hearty Chicken Soup)

Ingredients
Noodles
2 eggs
1 teasp. lard
2 Tblsp. cream
¼ teasp. baking powder
¼ teasp. salt
Add flour for noodle dough

Instructions
Mix all ingredients and roll out on cookie sheet with flour.   Cut into ½" wide x 2" long strips.  
Sprinkle both sides with flour.  

Chicken Stock
½ Chicken 1 can of chicken broth and/or boulion cubes

Instructions
Cook chicken in water on covered pot on stove and save juices.
Remove chicken from pot to debone and shred.  
Place shredded chicken back in pot.
Bring to boil and add the noodles little by little so they don't clump together.
Cook about 20 min. until noodles are done.

A Hearty Chicken Soup

This is one of Chris's favorites.   A meal his mother knew he'd love.   Serve with baked potatoes and buttered green beans.

Menu
Swiss Steak

(The most tender meat you will ever have)

Ingredients
One or two packages of round steak
2 cans or jars of tomato sauce
Garlic Powder
Bay Leaves

Instructions
Cook in flat skillet.   Cut all the fat off around the edges and fry fat to make grease.   Remove fat from skillet.
Cut into pieces and slit edges (so it doesn't curl when frying.)
Sprinkle both sides with garlic powder.   Brown meat in grease, and reduce to simmer.
Add enough tomato sauce or juice to cover meat along with two bay leaves (you can also use 1/4 teasp. bay leaf powder.)  
Simmer until meat is tender (about 1-3 hrs.)   Turn meat a couple of times.

It's Worth the Wait

This is one of Chris's favorites.   A meal his mother knew he'd love.   Serve with baked potatoes and buttered green beans.

Dessert

Flan

(Dessert from Dominican Republic)

Ingredients
Flan
1 12 oz. can sweetened condensed milk
1 12 oz. can evaporated milk
1 pinch of salt
4 eggs
Vanilla extract (to taste)
6 oz. cream cheese
grated lemon rine (to taste)

Caramel
1 cup sugar
1/4 cup water

Instructions
Mix all ingredients in blender, except for caramel. Pour caramel in the bottom of the first pan.
Place the flan mix in the first pan containing the caramel.
Place the first pan inside a second pan that contains water.
Bake for 45 minutes.

A Must in all Spanish Gatherings

We always had this at our family gatherings. It was one of my favorite parts of having a gathering, because we usually had some left over. During the remainder of the week, I could nibble at it.

If you think this is like any milk custard you are wrong, you must try it!

Prism Cake

Ingredients
1-3 oz. package cherry, lime, and orange Jello
3 cups hot water
1 ½ cup cold water
1 cup pineapple juice
¼ cup sugar
1-3 oz. package lemon jello
½ cup cold water
2 cups graham crackers
½ cup butter or margarine, melted
2 cups whipping cream, whipped

Instructions
1. Prepare three jellos separately using 1 C. hot water, and ½ C. Cold water each.   Put in 8"x8" pan and chill until firm.
2. Combine pineapple juice and sugar, heat until sugar is dissolved.   Then dissolve lemon Jello in hot liquid.   Add remaining ½ cup cold water and chill until syrupy.
3. Mix crumbs with melted butter and press into a 9" x 13" pan.
4. Whip 2 cups cream and blend into lemon mixture.
5. Cut jellos into ½" squares and then fold piece into cream and lemon mixture.
6. Pour into crumb-lined pan, reserving enough to garnish top if desired.
7. Chill for 8 hours before serving!

Even Bill Cosby Would Love This Jello

Tasty and tart with graham crust.   I like this dessert.   It reminds me of hot summer nights at home.   Late at night I would watch television and go to the refrigerator for this snack.   It kind of bounces around in your mouth, like jello does.   With the whip cream, and graham craker crust, it is a very nice combination.

Forgotten Cookies

Ingredients
2 egg whites-beat until stiff
2/3 cups sugar-add gradually
1 cup choc. chips
1 cup chopped nuts

Instructions
Heat oven to 350 degrees.
Drop by teaspoon on waxed paper on cookie sheet.
Turn oven off and put cookies in.
Leave in for four hours or overnight.

White Blobs

Mom used to make these, and I think she thought we liked them a lot.   Sadly though they were not our favorite, but at least they were something sweet, when you were in the mood for sweets.

Mom's Gum Drop Cookies

Ingredients
2 cups brown sugar
4 eggs
1 teasp. cinnamon
1 cup small gumdrops
1 teasp. Vanilla
2 cups flour
1 Tblsp. water
1/2 teasp. baking powder

Instructions
Put 1/2 cup flour in a bowl.
Cut up gum drops and flour; let stand while beating eggs, salt and water.
Add sugar then add 1 1/2 cups with 1/2 teasp. baking powder;
Add 1 teasp. vanilla. Bake in greased 10" x 14" pan
at 350 degrees for 20-30 minutes.

Chewy to the last drop

I remember Grandma Fruit having these around the holidays.   We would visit right after Christmas and the whole family would be there, all ten children and the many grandchildren.

The grandchildren would go outside and play hide and seek, etc., while Mom's brothers and sisters would start to laugh and laugh in the house on the hill.     You could hear them miles away, I imagined, having fun just talking.   It brings warmth to your heart to know in this modern day and age that a family could be close enough to really enjoy each others company.  Sadly after grandma and grandpa passed away, the family is not the same, yet they still get together for the holidays and a summer corn boil in August.

Watergate Dessert

Ingredients
Crust
20 graham crackers
2 Tblsp. powdered sugar
3 Tblsp. brown sugar
4 Tblsp. butter melted

Instructions
Crush above and press into 9" x 13" pan

Cheese Layer
8 oz. cream cheese
½ pint cream
whipped or ½ tub cool whip
¾ cup powdered sugar

Instructions
Beat and spread onto crust.

Pudding
2 pkg. lemon instant pudding (better with 3 pkg.)
2 ½ cups milk

Instructions
Beat and pour onto cheese layer.   Cover with whipped cream or rest of cool whip.   Chill.   Any kind of instant pudding may be substituted for the lemon.

An Honestly Refreshing Dessert

Mom served this to Maribel and I when we were on vacation in Wisconsin before we were engaged.

Pina Colada

(Refreshing coconut drink originating from Puerto Rico)

Ingredients
2 oz. of coconut cream
4 oz. pineapple juice
3 oz. light or dark rum (optional)
2 cups of crushed ice

Instructions
Mix in a blender.
Garnish with a pineapple spear and a cherry.
Serves 2.

Spanish Gathering in New Jersey

In the Spanish congregation this is one of the refreshments they offer before the meal.
While visiting our dear friends, Paul and Evelyn Allen in New Jersey, a family in their Spanish congregation invited all of us over for dinner. They gave us this recipe. They also had one of the biggest fish in their fish tank I have ever seen. They joked about it being a piranha. It has eaten all the other fish in the tank. I'm glad not to be a fish.

Culinarias Hispanas
Menu
Flan

(Postre Dominicano)

Ingredientes
1 lata de leche condensada
1 lata de leche evaporada
1 pizca de sal
4 huevos
vanilla a gusto
ralladura de limon
3/4 creama de queso

Caramelo
1 taza azucar
1/4 taza agua

Instrucciones
Mezcle todos los ingredientes en la liquadora, excepto el caramelo.  
Cocine al horno a baño Maria.

Bethelites Know Where Deals Are

It seems like every place that offers good deals for the money, you will also find Bethelites.   Dallas Barbecue is one of those places.   Maribel and I have gone here a number of times for our Bethel Anniversaries with those who came to Bethel the same time we did.  

We have taken a number of guests here because the food is good.   Our guests have included, Charles and Carol Dieter, Kurt, Sue, and Kyle Straight, Bronco and Debbie Manojlovic, Eric and Shelly Manojlovic, and others.
