Creamy Potato Stix


1/2 cup plain flour
1 1/2 cups skim milk
1 can reduced fat Cream of Celery soup
1/2 lb. Healthy Choice cheese (like Velveeta)
1/2 tsp. salt
1 cup onion (diced)
garlic and black pepper to taste
5-6 large potatoes


Combine flour and salt in a saucepan; whisk in milk until smooth. Bring to a boil and stir for 2 minutes. Remove from heat; whisk in cheese until smooth. Set aside. Peel potatoes and cut into sticks. place in a 9" X 13" baking dish sprayed with Pam. Sprinkle with onion. Top with sauce. Bake uncovered at 350° for 1 hour or until potatoes are tender.
