Low Fat Lasagna
1 lb. VERY lean ground beef or ground turkey
1 large onion (diced small)
1 bell pepper (diced small)
8 large mushrooms (sliced)
1 large can tomato paste
1 container fat free ricotta cheese
1 small pkg. mozzarella cheese
1 pkg. parmesan cheese
lasanga noodles
To taste:
oregano
basil
bay leaf
garlic
thyme
parsley
Cook beef with onions and peppers. Drain well. Rinse with hot water. Add tomato paste and all spices. (You may need to add some water to keep this from sticking while simmering) Simmer 1 hour. Mix ricotta cheese with parmesan cheese and some parsley. Remove bay leaf before assembling. Spray a 9" X 13" pan with cooking spray. Cover bottom with cooked lasagna noodles. Add some meat sauce. Add ricotta cheese mixture. Sprinkle with some mozzarella. Repeat layers until you are out of all ingredients. End with mozzarella cheese on top. Bake at 375° until bubbly.
