Low Fat Pineapple Upside Down Cake
1 lite yellow cake mix
1 cup pineapple juice
1/2 tsp. pineapple extract
2/3 cup Sunsweet Lighter Bake
egg substitute to equal 4 eggs
1 cup fat free sour cream
1 can sliced pineapples
maraschino cherries
1/2 cup brown sugar substitute
1/2 cup fat free butter
Preheat oven to 350°. Mix butter and brown sugar substitute together and spread in the bottom of a 9" X 13" cake pan. Tope with drained pineapple slices. Put a cherry in the center of each pineapple slice. Mix cake mix with pineapple juice and pineapple extract. If there isn't a whole cup of juice that drains off the pineapple, add water to make 1 full cup of liquid. Add Lighter Bake. Mix well. Add egg substitute and mix well again. Add sour cream last and mix well again. Pour batter over pineapple. Bake 35-40 minutes or until a toothpick inserted in the center comes out clean. Allow to cool. Turn out on cake server. (HINT: It helps to line the cake pan with wax paper.)
