Meatball Sub Casserole
1/4 cup seasoned bread crumbs
3 Tbs. grated Parmesan cheese
1 pound ground beef
1 egg
1 loaf Italian bread, cut into 1" slices
8 oz. cream cheese, softened
1/2 cup mayo
2 tsp. Italian seasoning (divided)
1/4 tsp. pepper
2 cups shredded mozzarella cheese, divided
1 jar (28 oz.) spaghetti sauce
2 garlic cloves, minced
In a bowl, combine 1 tsp. Italian seasoning, garlic, egg, bread crumbs and Parmesan cheese. Add beef and mix well. Shape into 1" balls; place on a rack in a shallow baking pan. Bake at 400° for 15-20 minutes or until no longer pink. When meatballs are done, toast bread in the oven until slightly browned. Arrange bread in a single layer in an ungreased 13x9x2" baking dish. Combine cream cheese, mayonnaise, remaining Italian seasoning and pepper; spread over the bread. Sprinkle with 1/2 cup mozzarella. Add meatballs. Pour sauce over meatballs. Sprinkle with remaining mozzarella. Bake, uncovered, at 350°F for 30 minutes or until heated through.
Note: We like this served with a big Caesar salad.
