Here's an assortment of recipes for baked goods - I've made them all and enjoyed them. I hope you do too.

                                 Brownies

   1      cup           sugar

     1/2  cup           walnuts -- chopped

Cream the margarine and sugar until light and fluffy.  Beat in 
the eggs and vanilla.  Sift the flour and cocoa into the creamed
 mixture.  Mix well.   Stir in the chopped nuts and pour into 
prepared 8X8 pan.  Bake at 350 for 25 minutes.

                            Buttercream Icing

Cream Crisco.  Add sugar slowly - alternate with pareve milk.
  Add vanilla - adjust as necessary  - add food coloring.

Chocolate icing - 1/2 oz melted chocolate - less pareve milk

Mocha icing - very strong coffee instead of pareve milk.

                          Butterscotch Brownies

     1/4  cup           margarine
   1      cup           brown sugar
   1                    egg
   1      teaspoon      vanilla
     1/2  cup           flour
   1      teaspoon      baking powder
     1/2  teaspoon      salt
     1/2  cup           chopped nuts -- optional

Melt the margarine. Mix the margarine with brown sugar.  Let
cool a bit and add the egg and vanilla.  Stir in the flour, 
baking powder, and salt.  Add nuts if you like that. Bake 20-
25 minutes in 350 oven in 9X9 pan.

                    Butterscotch Refrigerator Cookies

   1 3/4  cups          flour
   1      teaspoon      baking powder
     1/2  teaspoon      salt
     1/2  cup           margarine -- softened
   1      cup           dark brown sugar
   1                    egg
     1/2  teaspoon      vanilla
     1/2  cup           walnuts -- chopped

Sift together flour, baking powder and salt - set aside.  Cream 
margarine with  brown sugar.  Add egg, vanilla and walnuts.  Beat
 in flour until dough is smooth.  Chill 30 minutes.  Shape into 
2 rolls 1 1/2 inches in diameter and wrap in wax papter.  Chill
 several hours until firm.  Preheat oven to 350 F. Cut into 1/8 
inch slices.  Place on ungreased cookie sheet.  Bake for 10-12
 minutes.  Remove from cookies sheet to cool.

                                 Challah

   2      cups          bread flour
   1 1/2  cups          whole wheat flour
   3      tablespoons   sugar

   2      teaspoons     yeast

Put in bread machine in order recommended by your  manufacturer.
Use the dough cycle - then braid into 2 smallish loaves.  Bake
 in 350 oven for 30 minutes.

                               Cheese Cake

  16      ounces        cream cheese
     2/3  pint          sour cream
   1      cup           sugar
   1      teaspoon      lemon juice
   4                    eggs
     1/2  box           graham crackers
   1      stick         margarine -- melted

Combine graham cracker crumbs and melted margarine,
press into pan.

Combine other ingredients, pour into pie shell and bake.

Variation - add vanilla pudding mix instead of some of the
sugar.


Bake at 375 for 10 minutes then lower it.  Let cool in oven.

                      Chocolate Chip Oatmeal Cookies

   1 1/4  cups          brown sugar
     1/2  cup           sugar
   2                    eggs
   2      tablespoons   soy milk -- or milk
   2      teaspoons     vanilla
   1      teaspoon      baking soda
     1/2  teaspoon      salt
   2 1/2  cups          Quaker oatmeal
  12      ounces        chocolate chips
   1      cup           nuts -- optional
   1 1/2  cups          flour

Beat margarine and sugars till creamy.  Add eggs, milk and 
vanilla, beat well.  Add flour, baking soda and salt, mix well.
 Stir in oats, chocolate chips and nuts (optional) and mix well.
  Drop by tablespoons onto ungreased cookie sheet.  Bake for
 9-10 minutes for chewy cookies and 12-13 for crisp ones.  Cool
 1 minute on cookie sheet, then move to wire rack.

                       Chocolate Peanut Buddy Bars

   1      cup           peanut butter
   6      tablespoons   margarine
   1 1/4  cups          sugar
   3                    eggs
   1      teaspoon      vanilla extract
   1      cup           flour
     1/4  teaspoon      salt
   2      cups          Nestle chocolate chips -- divided

Preheat oven to 350F.  Peat peanut butter and margarine until
 smooth.  Add sugar, eggs and vanilla - beat till creamy. Add
 flour and salt.  Stir in chocolate chips.  Spread into 9X13 
ungreased pan.  Bake 25 to 30 minutes or  until edges turn brown.
  Immediately sprinkle with remaining chocolate chips. Let stand
 5 minutes, then spread over the top.  Cool completely and cut 
into bars.

                               Coffee Cake

     1/4  cup           shortening
   2      teaspoons     baking powder
   1                    egg
     1/2  cup           water

   2      tablespoons   shortening
     1/2  cup           brown sugar
   1      teaspoon      cinnamon
   2      tablespoons   flour
     1/3  cup           chopped nuts

Mix together the last 5 ingredients and chill.

Mix together the first 7 ingredients.  Pour into 9x9 pan.
  Sprinkle on the topping.  Bake at 375 F. for 1/2 hour.

                              Crunchy Mounds

     1/4  cup           peanut butter
   2 1/3  cups          corn flakes
     1/3  cup           peanuts

Melt the chocolate chips and peanut butter in the microwave. 
 Stir in the corn flakes and nuts.  Drop by teaspoonfuls onto 
waxed paper.  Cool 15-20 minutes or until set.

                              Easiest Fudge

                        nuts -- optional

Melt chocolate chips with milk over a low flame (~5 minutes).

Stir.  Add vanilla and nuts, if desired.  Spread on waxed paper.
  Chill until firm.  Cut up and store at room temperature.

                               Fruit Torte

   1      cup           sugar
   1      cup           shortening
   2                    eggs
   1                    egg yolk
   4      cups          flour
   3      teaspoons     baking powder
     1/2  cup           orange juice
   2      cans          pie filling -- cherry, apple, peach
   1                    egg white -- slightly beaten
     1/4  cup           sugar
     1/2  cup           chopped nuts

Cream together sugar and shortening.  Add eggs and egg yolk, one
 at a time, beating after each addition.  Mix together flour and
 baking powder and add to creamed mixture alternately with 
orange juice.
Pat half of dough into an 11X15 cookie sheet.  Spread pie 
filling over dough.  (may use 3 cans if desired) Cover with 
remaining dough.  There will be gaps in the dough.

Brush with beaten egg white.  Sprinkle with sugar and nuts.  
Bake at 350 until lightly browned - 40-50 minutes.

Combine flour sugars, eggs, margarine and cocoa until well
 blended.  Stir in vanilla and pecans (if desired).  Spread in 
well-greased 9X13 pan. 
Bake at 350 for 25 minutes. Cool in pan on wire rack.

                               Hamentashen

   1      c             sugar
     3/4  c             orange juice
     1/2  c             oil
   3      tsp           baking powder
   5      c             flour
   1      tbsp          orange rind
  12      oz            pastry filling
     1/2  c             raisins -- ground
     1/2  tsp           lemon juice
     1/2  c             nuts -- chopped
   1                    egg -- beaten

Combine the first seven ingredients to make the dough.
  Refrigerate overnight.   Mix the can of filling with the nuts,
raisins and lemon juice.  Roll out the dough, cut into circles,
put a teaspoon of filling mix in the center of each circle and
pinch into triangles.  Brush with beaten egg thinned with a 
little water.  Bake in 350 oven until lightly browned.

                              Honey Brownies

Preheat oven to 350F.
Grease one 9 inch pan.  Cream butter and sugar, blend in honey
 and vanilla.  Add eggs, one at a time beating well after each. 
 Combine flour, cocoa and salt.  Gradually add to the mix.  
Stir in nuts.  Pour into pan.  Bake for 25-30 minutes or until
 brownies begin to pull away from edge of pan.  Cool in pan.

                           Hungarian Peach Cake

     1/2  cup           sugar
   1      teaspoon      cinnamon

Cream margarine.  Add sugar, then eggs then flour mixed with 
baking powder and cinnamon. Add lemon extract.  Pour into pan. 
 Press on peaches.  Sprinkle on topping. 
 
Bake at 400 for 1/2 hour.

                            Passover Brownies

   1      c             matzo meal
   2      c             sugar
   1      pkg           vanilla sugar -- if available
     1/2  c             cocoa
     3/4  c             margarine
   4                    eggs
     1/2  c             walnuts -- chopped

Melt margarine and add cocoa. Let cool.  Beat eggs till light,
 gradually beat in sugar (and vanilla sugar). Blend in cocoa 
mixture and matzo meal.   Blend in nuts, or save them to sprinkle
 over the top.  Pour into a greased 9X13 pan (or two 8X8 pans).
  Bake 25-30 minutes at 350.  Cut into squares when cool.  They
 will be very fudgy.

                           Peanut Butter Kisses

   2                    egg whites
     2/3  cup           sugar
     1/2  teaspoon      cream of tartar
     1/2  cup           peanut butter

Beat egg whites and cram of tartar until forms stiff peaks.  Add
 sugar 1 tablespoon at a time beating well after each addition. 
 Continue beating untill holds very stiff peaks.  Lightly fold 
in peanut butter.  Drop by teaspoonful onto greased cookie sheet.
  Bake at 300 for 25 minutes or until lightly browned.  
Remove from cookie sheet immediately.

                                Pecan Pie

   1                    pie shell
     1/2  cup           margarine
     1/2  cup           sugar
     3/4  cup           white corn syrup
     1/2  cup           maple syrup -- or honey
   3                    eggs -- slightly beaten
   1      teaspoon      vanilla
   2      cups          pecans -- or walnuts

Cream the margarine well, add sugar slowly, creaming until 
light.  Slowly stir in syrup, eggs, vanilla and 1 cup nuts. 
 Nuts should be slightly crushed or broken by mixer.  
Pour into pie shell and arrange remaining whole nuts to 
decorate pie.  Bake at 350 for 1 hour.

                              Pineapple Cake

     1/2  cup           oil
     2/3  cup           crushed pineapple
     1/4  teaspoon      baking soda
   1 3/4  cups          flour
   1 1/4  cups          sugar
   2                    eggs
   1 1/2  teaspoons     baking powder
   1      teaspoon      vanilla

Beat egg whites with sugar till stiff.  Put in the 'fridge. 
 Mix together oil, sugar, egg yolks and vanilla.  Mix the baking
 soda into the pineapple.  Put the baking powder into the flour
.  Alternate into the oil - the flour and pineapple beginning
 and ending with the flour.  Fold in the egg whites.  Bake in 
small cake pan at 350 - till done.

                             Praline Cookies

     1/2  cup           margarine
   1 1/2  cups          light brown sugar
   1                    egg
   1      teaspoon      vanilla
   1 1/2  cups          flour
   1      cup           pecans -- coarsely chopped

Cream together margarine and sugar until light and fluffy.  
Add the egg and mix thoroughly.  Add the vanilla, flour and nuts
- mix well.  Spread over cookie sheet - may not reach the 
edges, but try!
Bake at 325 for 25 minutes.  When cool, cut into squares.
