                               Blintz Loaf

     1/2  cup           margarine -- melted
   2                    egg
   1      teaspoon      baking powder
   3      tablespoons   sugar
     3/4  cup           milk
   1 1/4  cups          flour
					
   1      pound         cottage cheese
   2      tablespoons   margarine -- softened
   1                    egg
   1      tablespoon    sour cream
   1      teaspoon      salt
   1      tablespoon    sugar
   4      ounces        cream cheese

Combine first 7 ingredients to make batter, and the others to
make the filling.  Layer batter, filling, batter into a greased
9x5 loaf pan.  Bake at 350 for 1 hour.

                        Cottage Cheese Croquettes

     1/2  lb            cottage cheese
   3      tbsp          butter
   2                    eggs
     1/2  tsp           salt
                        pepper -- to taste
   2      cloves        garlic -- minced
   1      tsp           dried dill weed
   1 1/2  c             flour

Mix the ingredients together - form balls.  If the batter is 
too looseto form balls, keep adding more flour.  The original
 recipe called for dipping the balls into beaten eggs and then 
bread crumbs, but for simplicity I omit that step.  Then place 
them on a lightly greased pan and bake in a 425 F oven for 15-20
 minutes.  (They may be fried instead of baking them.)

                              Custard Kugel

   8      ounces        fine noodles
   1      cup           butter -- softened, (or less)
   1      cup           sugar
     1/2  pound         neufchatel cheese
   8                    eggs
   1      pint          plain lowfat yogurt
   2      teaspoons     vanilla

Preheat oven to 350.
In a 4 quart pot cook noodles in boiling salted water for 5
 minutes.  Drain and rinse in cold cater.  Turn into a 12 inch
 greased casserole.  In a separate bowl, beat butter, sugar,
 cream cheese, eggs, sour cream and vanilla.  Pour egg mixture
 over noodles and mix.  Bake ofr 1 hour or until borwned.

Serve chilled.

                               Peach Pilaf

   2      tablespoons   almonds -- slivered (or more)
   1      tablespoon    corn oil
   1      pound         tofu, firm -- diced, (1/2 inch)
   1                    peach -- peeled and diced
     1/2  teaspoon      ground ginger
   1      cup           rice
   1      teaspoon      lemon zest -- grated
                        salt
                        pepper

Toast the almonds in a shallow baking pan in a 325 oven for 
about5 minutes (a toaster oven works fine) Cool.  Heat oil,
 add tofuand peach and saute, gently stirring about 2 minutes.
 Remove and reserve.  Put ginger, lemon zest and rice in 2 cups
 of water.  Bring the liquid to a boil over high heat.  Lower
 heat, cover, and simmeruntil liquid is absorbed and the rice
 is tender, about 30 minutes.  Stir in the toasted almonds and
 tofu-peach mixture.  Season to taste with
salt and pepper.

                            Spaghetti Pancake

   4      cups          spaghetti -- cooked (1/2 lb)
   2      tablespoons   milk
     1/4  teaspoon      oregano
                        black pepper
   2      teaspoons     butter
   2                    eggs
     1/4  cup           parmesan cheese -- grated
                        salt

In medium bowl, combine the spaghetti, eggs, milk, cheese,
 oregano, salt and black pepper.

In a 10 inch skillet (greased) heat the butter.  Add the
 spaghetti mixture.  Cook till bottom is browned, about 10
 minutes.

Turn it over and brown other side 3 to 5 minutes.

                            Spinach Casserole

                          Spinach Cheese Noodles

   8      ounces        egg noodles
   1      clove         garlic -- minced
     1/2  teaspoon      basil
   1      cup           cottage cheese, lowfat
                        black pepper
   1      tablespoon    oil
  10      ounces        frozen spinach -- thawed and drained
   1      tablespoon    parsley flakes
                        salt
   2      tablespoons   parmesan cheese -- grated

Cook noodles, drain them.

Heat the oil, saute the garlic ans spinach ~5 minutes

Add the basil, parsley, cottage cheese, salt and pepper. Cook 
overlow heat, stirring until blended and heated through ~2 
minutes.

Add the spinach and cheese to the noodles and toss, sprinkle 
with the parmesan.

                             Spinach Lasagna

   1      lb            cottage cheese
   2                    eggs
   1      pkg           frozen spinach -- chopped
     1/2  c             matzo meal (or bread crumbs)
   1                    onion -- chopped
                        garlic -- to taste
                        pepper -- to taste
   1      pkg           lasagna noodles
   1      jar           marinara sauce
                        mozzarella cheese -- shredded

Combine the cottage cheese, eggs, spinach and matzo meal.  The
 original recipe called for chopping and saute'ing an onion.  
I usually just add a chopped onion, unsauted - but if you don't
 like that you can just use the dried minced onions (or go
 ahead and saute them if you've got the time! )  Add the other
 spices to taste.

Then go ahead and do the lasanga thing!  Layer sauce, noodles
 ( I just put them in uncooked with lots of sauce ) , cheese 
glop, sauce, noodles, cheese glop, noodles , sauce and top with 
some shredded mozzerella.  You can add mozzerella between all
 the layers if you want, but I find it tastes just as good this
 way with a bit less fat.

Bake in a 350 oven for about an hour.

NOTES : This recipe freezes well.  The original recipe used 
eggplant instead of spinach - peeled, cubed, and boiled or 
steamed.  Do this and you have eggplant lasanga :-) (But using 
frozen chopped spinach is faster!)
