ZIG'S FARMHOUSE SOUP
- 1 lb sirloin, cubed
- 1 lb skinless, boneless chicken breast, cut in cubes
- 2 onions, coarsely chopped
- 3 large tomatoes, coarsely chopped
- 2 carrots, thinly sliced
- 1 medium turnip, diced
- 3 potatoes, diced
- 1 large stalk celery, with leaves, coarsely chopped
- 1 cup sliced green beans
- 1/2 cup zucchini, coarsely chopped
- 1 tin chick peas, rinsed and drained
- 1 cup fresh mushrooms, sliced
- 5 cups water
- 1 tbsp lemon juice
- 2 tbsps olive oil
- 1 tbsp pesto
- 1 tbsp brown sugar
- 2 tbsps fresh parsley, chopped
- 1 tbsp Ragu Sauce - Basil
- salt and pepper to taste
In skillet, heat oil over medium heat; add sirloin and chicken, stirring until outside seared.
Add onions and continue to cook for 6 - 8 minutes, or until onions tender.
In large pot, bring water to boil. Add meat mixture, potato, carrot, turnip, celery and tomato. Cover and boil over medium heat for 15 - 20 minutes, stirring occasionally.
Add green beans, mushrooms, chick peas,brown sugar, lemon juice and pesto; cover and simmer for 10 - 15 minutes, adding more water, if needed.
Salt and Pepper to taste. Sprinkle fresh chopped parsley in each bowl immediately before serving.
Serve with Crusty Italian or Sourdough Bread. Makes about 10 (1 cup) servings.
