(NAPSI)-Spring has finally sprung, bringing with it nicer weather and warmer temperatures. Celebrate the arrival of spring with a refreshing snack that's perfect to enjoy during breaks in spring cleaning, after the kids' baseball games, or anytime: Fruit Juice Tapioca Pudding.

Fruit Juice Tapioca Pudding is made with Minute® Tapioca and your choice of fruit juice-such as apple, orange, grape or pineapple. Best of all, it takes only five minutes to prepare!

Fruit Juice Tapioca Pudding

Prep: 5 minutes

Cook: 5 minutes

 Makes 4 servings

  • 1/3 cup sugar
  • 3 Tbsp. Minute Tapioca
  • Dash salt
  • 2 cups apple juice (Or use grape juice, pineapple juice, orange juice, grapefruit juice, juice blends or mango nectar.)

Directions:

  1. MIX all ingredients in medium saucepan. Let stand 5 minutes.
  2. COOK on medium heat, stirring constantly, until mixture comes to full boil. (Pudding thickens as it cools.) Remove from heat.
  3. COOL 20 minutes; stir. Stir before serving. Serve warm or chilled.

For extra flavor, try adding a "mix in" to chilled Fruit Juice Tapioca Pudding. For example, you can jazz up Apple Juice Tapioca Pudding by topping it with raspberries or shelled walnuts. Or, turn Pineapple Juice Tapioca Pudding into a tasty tropical treat by garnishing it with flaked coconut and a maraschino cherry!
