GooseOn this page you will find some recipes that are a little more complicated and time consuming, but they are "not" fancy....(Heck...who has time for fancy!) The prep work takes a wee bit longer, but if you try one, I think you will agree that it was well worth it. I have no problems feeding these foods to my kids...and if you know kids, then you know how very picky they can be sometimes.


Paprika Chicken
6 lrge chicken breasts, boneless & skinless 1 tbsp paprika 1/2 tsp salt 1/8 tsp white pepper 1/2 tsp garlic powder 1 1/2 cups chicken broth 3/4 cup sour cream Spiral Noodles 1/4 cup chopped parsley Brown chicken breasts in a skillet. Remove from pan and add spices; stir 1 minute. Add chicken broth and cook for 5 minutes, to reduce liquid. Turn down heat and add sour cream. Return chicken to pan and simmer, covered until chicken is cooked through. Serve over spiral noodles and sprinkle with parsley. Yield 6 servings.

Minestrone Soup
1 tbsp olive oil 1/2 tsp pepper 1 cup onion, sliced 4 cups vegetable broth 2 cups chicken broth 6 cloves garlic, minced 28oz can tomatoes,with juice 1 cup carrots, diced 1 jar PC 7 Bean Mix 1 cup celery, diced 2 cups water 2 tsp oregano 1 1/2 tbsp basil 2 tsp salt 1 cup shell pasta Heat oil in skillet over medium heat, add onion and garlic. Saute until soft. Add carrots and celery and cook for 5 minutes. Add spices and cook for 2 more minutes. Transfer mixture to soup pot and add broth and tomatoes. Lower heat and simmer for 2 to 2 1/2 hours, uncovered. Add bean mix and water. Pasta may be added or cooked separately. Continue cooking 15 to 20 minutes. NOTE If freezing, leave out pasta, this can be added later.

Beef Goulash
2 tbsp olive oil 1 1/2 tsp caraway seeds 1 lb round steak, cut into 1" cubes 4 cups boiling water, more if necessary 5 cloves garlic, minced 2 cups cooked pasta spirals 3 lrg tomatoes, chopped 1 1/2 tsp paprika 2 med grn peppers, cubed In a skillet, heat oil and saute meat until brown. Remove and set aside. Add onions and garlic and saute until soft. Add paprika and heat through, then return meat to skillet. Continue cooking for 5 more minutes, then transfer all to soup pot. Add half the tomatoes and half the peppers. Add 2 cups of boiling water. Bring to a boil, cover, lower heat and cook for 1 1/2 hours. Add the rest of the tomatoes and peppers another 2 cups of boiling water and cook another 45 minutes uncovered. Check meat for tenderness. Serve with cooked pasta spirals. For a thicker gravy add 2 tbsp cornstarch and bring to a boil to thicken.

Sweet & Sour Meatballs
1 lb grd beef 1 tsp salt 1/2 tsp nutmeg 1/2 tsp dry mustard 2 eggs, beaten slightly 1/2 cup milk 1/2 cup fine bread crumbs 1 1/2 tbsp finely chopped onion 1/4 cup flour 1/2 cup cooking oil Measure & mix together first 8 ingredients. Shape into 24 small meatballs using about 1 tbsp of meat mixture for each. Roll each in flour then place in skillet with oil. Cook until done, then set aside. Sauce: 3/4 cups water 1/3 cup vinegar 3/4 cup brown sugar 1 tbsp soy sauce 2 tbsp corn starch 3 tbsp water Mix water, vinegar, brown sugar, and soy sauce in saucepan. Mix corn starch with 3tbsp water to form a paste and add to mixture in saucepan. Cook on high heat, stirring constantly until thick. Pour sauce over cooked meatballs. Yield 6-8 servings.
